Mexico is famous for his excellent gastronomy, in Mexico there are more than a 100 traditional dishes that are spectacular, but not only we have an excellent gastronomy, right now in Mexico we have one of the most recognized Chef´s in the world, his name is Carlos Gaytan and he was the first Mexican to win a Michelin star, not only we have one of the the best chef´s in the world, we have more than 10 restaurants that are very recognized throughout the world.
If we focus only in the best Mexican dishes it´s difficult to decide which are the best ones, because I consider almost all of them delicious, in Mexico we eat insects and a lot of extravagant food, like "Chapulines" that are grasshoppers, "Huitlacoche" which is an fungus that grows on cord, but you should try these, they are delicious.

Well it was hard to make this list but these are my top 5 Mexican dishes:
5- Chilaquiles, we eat chilaquiles normally for breakfast, these are made by tortilla chips, Red sauce, cheese, beans, onions and almost all the times as a Mexican I include in the top scrambled eggs.

4- Pozole, is a Mexican soup which is spicy, and it includes corn, onion, pork, and garlic. It is typical for lunch when you are working, and they sell it a lot in the streets.
3-Mole, is a very typical sauce we use here in Mexico, and almost all the times we use it with chicken or with beef, it looks like chocolate but its spicy and delicious

2- Cochinita Pibil, the most traditional dish from Yucatan, one of the most important states in Mexico, Cochinita is Pork, but almost all the times we eat it in tacos, with onions and sauces, but the pork is cooked in a red sauce that makes the pork be delicious.
1- Tacos de Pastor, this the most typical food from Mexico, but stereotypes have ruined how delicious they are, in the states they think a taco are the ones from taco bell and thats wrong, tacos need a handmade tortilla, pastor, which is pork, and also please when you eat them put some lime, onion, and green sauce.
